Finally, be sure to use frying oil for frying eggplants, as these oils are heat-resistant and do not turn into harmful compounds during high-temperature frying.

The first method of frying eggplant
Peel a squash, grate it and squeeze the juice. Add salt and pepper and simmer for half an hour.

Then rinse the eggplant and put it in the basket to remove excess water and dry. At this stage, pour an egg white into a bowl and stir with a fork to open. Pour the oil into the pan to heat and dip the eggplants in the egg whites and place in the pan. This way, the eggplant absorbs very little oil and you can be sure that it does not smell like eggs at all.

In this method, to fry the eggplants, we first put them in salt water for half an hour. Then pour some water into the pot and bring to a boil, as soon as the eggplant juice boils, put it in boiling water for 2 to 3 minutes and let it boil. Then pour them into a strainer to remove excess water and then fry them. The problem with this method is that the eggplants are slightly boiled and soft.

The third method of frying eggplant
In this method, after the salt water stage and before frying the eggplants, we dip their surface in yogurt instead of egg whites. Yogurt, like egg white, has no effect on eggplant flavor and only reduces oil absorption.

The fourth method of frying eggplant
This method is basically oiling eggplant. Peel a squash, grate it and squeeze the juice. Then place the frying pan on the stove and fry the eggplants in hot oil. The point to note here is that eggplant should be fried over high heat to absorb less oil, and try to keep the eggplant frying process as short as possible.

Now pour about one to two glasses of water into a pot and let the water boil, put the fried eggplants in boiling water for 1 minute, this will cause the absorbed oils of the eggplant to enter the boiling water.

Then take the eggplants out and put them in a basket to drain them. Now your eggplants are ready to use in stews and other foods with the least amount of oil. This method is good for people who do not like to use egg whites or yogurt.

In addition, this trick works when you can not use the above 3 methods for reasons such as lack of time, and on the other hand, you do not like to use eggplants full of oil that will harm your health.

The fifth method of frying eggplant
Peel a squash, grate it and slice it as desired. Put them all in a frying pan and sprinkle a little salt on it and add half a glass of water to it. If your eggplants are small or thinly sliced, add less water and place in a frying pan to cook over low heat. After the water is absorbed by the eggplants, add one or two tablespoons of oil and turmeric to the dish and fry the eggplants. This method is a great diet method for frying eggplant so that you can use this delicious food safely without absorbing extra calories.
